https://www.manualslib.com/download/1145819/Selfsat-Hh90.html
https://www.manualslib.com/manual/2194454/Stab-Hh100.html

So, I am assuming your pole is plumb, and you used this manual:
https://www.manualslib.com/download/1145819/Selfsat-Hh90.html
For the right angles: the manual suggests that you take the latitude for your motor axis angle. I would instead suggest to take your latitude plus 0.6 degrees, so 41.8 degrees; the so-called modified motor angles (which follow the clarke belt better).
As the scale of the motor might not be very precise: would you have an inclinometer, or inclinometer app on your phone, to measure the angle of the motor? Maybe directly at the axis, or at the base where the axis comes out?
The symptoms you describe suggest that at the moment your combination of motor axis angle, and dish elevation angle, is not spot-on; so it is best to check this best as possible, to reduce the needed effort later on.
NB If the motor tube with 45 degree bend is already on the axis, measuring directly at the axis might be impossible. I don't know how precise the 45 degree bend is made, or you could measure the angle on this bended tube, with 45 degree difference?
The dish elevation scale (the 45 in the formula is because of the angle of the bend in the tube) should then also be plus 0.6, so it should be set at 39.1 degrees of the elevation scale.
With these angles, try to find your satellites again. Leave the motor angle untouched, and adjust only with dish elevation at this moment.
How is reception with these angles?
When you still encounter the same problems, check the STAB HH100 manual for the usual fine-adjustment checks, starting at page 32:
https://www.manualslib.com/manual/2194454/Stab-Hh100.html
From your description, it seems like you have the true-south aligment good, already. So page 34, A and B, would be OK. (Notice that the proposed solutions for A and B are incorrect, and should be vice versa!!!!).
In your case carefully check C and D on page 35.
